At its most basic, mustard is merely ground mustard seeds plus liquid. However, within that easy combination lies a multitude of variables. Mustard can be hot, sharp or mild. It can be easily sweetened with honey, plain sugar or agave. The liquid used to make the mustard could be water, beer, vinegar or even sake. Some people even prefer to use partially cracked mustard seeds instead of ground.
Seem overwhelming? Don’t worry, just take a step back and start simple. To make a simple yellow mustard, start with ground mustard seeds and cold water. It’s important for the water to be cold unless you want a very mild mustard. The cold water ignites the reaction that gives mustard its signature tang! If you have a taste for tanginess, you can add a bit of vinegar in with the cold water. If you’re craving a simple, sweet mustard, such as the kind served with German hot pretzels, simply mix a teaspoon of sugar into the cold water before adding to the powdery mustard seed.
